摘要
中华民族是人类文明历史上最早发明酱的民族,中国人在既往数千年历史上对酱及酱类食品依赖甚深。酱园既是中国自先秦以下迄于近现代民族文化历史上的极其重要事象,同时也是庶民大众食事生活的厚重物质基础。中国酱园在家庭手工业传统的模式中维系了二千数百年之久,对中国历史上城市居民日常饮食生活的保障维系发挥了不可低估的重要作用。中国城镇中星罗棋布的酱园与庶民百姓家家户户的家酿酱缸共同保证了民族群体的蛋白来源,营造了独具魅力的中华民族酱文化。由于中国社会在近代的极端贫穷与严重保守落后,传统酱园文化一直维系到19世纪晚近才在“新酱油”的时代科技和市场现代化运行的合力推动下走上了缓慢而艰难的更新发展道路。
Chinese people are the pioneer in creating sauce in the human civilization history, And Chinese also depended deep on sauce in past thousands of years' history, ‘Jiang Yuan' was very important matter in Chinese history from Qin Dynasty to modern times, It was the thick and heavy material foundation, too. ‘Chinese Jiang Yuan' maintained two thousand and several hundred years in the traditional model of cottage industry. It brought into play inestimably important effect on the ensuring and maintaining of the townsmen' daily diet. ‘Jiang Yuan' which distributed star-studdedly in Chines town and ‘Jiang Jar' which was used in each Chinese common people family ensured the supply of protein and built special characteristics Chinese sauce culture together. Owing to the extreme poverty and severe conservativeness in morden times, traditional ‘Jiang Yuan' maintained till late of 19 century and hereafter walk to the slow and rough developing road forced by the combine strength of the times science and technology and modernizing market movement.
