Changes of activity and kinetic parameters of Actinidin after pretreatmentwith different kinds of organic solvents(methanol,ethanol and glycol)have been studied: The en zyme was activated after pretreatment with 10%～30% methanol, 10%～30% ethanol and 30%～50% glycol,the Kcat of the enzyme increased while the Km was not changed.
