摘要 利用高电压脉冲电场对白酒进行催陈研究。结果表明,高电压脉冲电场可以使白酒快速催陈,操作简便,速度快;高电压脉冲电场催陈的最佳参数为脉冲数50个,场强E=25kV/cm,助剂浓度1.0×10-6mol/L。处理后的酒样总酸、总酯和总醛等有所增加,总醇含量有所下降,酒体透明,陈香明显,辛辣味减少,柔和绵软,有余香。(孙悟) The experiment of liquor aging by high voltage pulse electric field was carried out and the results indicated that such technique could accelerate liquor aging and had the advantages such as simple operation and rapid aging and the optimal technical indexes were as follows : pulse number as 50, field intensity E=25kV/cm, and accessory ingredients concentration as 1.0×10^-6 mol/L. Total acid content, total ester content and total aldehyde content in liquor samples after the treatment had increased and total alcohol content had dropped. The treated liquor was clean with remarkable liquor aroma and enjoyable taste.
