衢州酿酒历史久远,有丰富的酒文化及优质的水资源和糯米资源。在新石器时代遗址中已发掘出印纹陶酒器;在西周时期,衢州的酿酒业和制陶业已相当发达;在宋代,衢州酒业里设有专门管理酒务的官员,酒税一直是历代封建朝廷的主要财源之一。石室酒是衢州的历史名酒,该酒营养丰富,有益健康。(陶然)
The wine-making history in Quzhou is very long and there are profound wine culture and abundant quality water resources and glutinous rice resources there. The plating pottery wine vessels unearthed in the Neolithic Age memorial site there are strong evidences. In West Zhou Dynasty, wine-making industry and ceramics in Quzhou were booming. In Song Dynasty, there were professional officials in charge of wine-making industry in Quzhou. Wine tax had always the main fiscal resource in feudal society. Shishi wine is the famous historic wine of Quzhou with abundant nutrition and helpful for health.
