环糊精包合法制备低胆固醇猪油的工艺研究 被引量:6

摘要 对β-环糊精包合法制备低胆固醇猪油的工艺条件进行了研究。结合单因素试验和响应面分析确定优化的工艺参数为:β-环糊精用量3.6%(W/W),加水量38%(W/W),反应温度44 ℃,反应时间60 min。在该条件下猪油胆固醇含量从89.45 mg/100 g可降低至13.95 mg/100 g,脱除率达84.4%,结合β-环糊精回收方法可形成具有良好经济性的低胆固醇猪油生产工艺。 Operation condition in preparation of cholesterol reduced lard by treatment with β-cyclodextrin was investigated. Optimum conditions determined from single factor test and response surface analysis were as follows: concentrations of β- cyclodextfin and water were 3.6% (W/W) and 38% (W/W) respectively, reaction temperature 44 ℃, reaction time 60 min. Under optimum conditions, the chalesterol content decreased from 89.45 mg/100 g to 13.95 mg/100 g the remove rate of cholesterol reached 84.4%, this process showed economic advantage when combined with a recovery process of β- cyclodextrin.
