n - 3 polyunsaturated fatty acids are a kind of unique physiological active material, which have extensive physiological functions in the organism. With the understanding and studying on the physiological functions of n - 3 polyunsaturated fatty acids, the research on their enrichment and purification become the focus. The methods of enrichment and purification on n - 3 polyunsaturated fatty acids were introduced, and the research on enrichment of α - linolenic acid of plant seed and DHA and EPA of fish oil were also summarized.
