本文综述了苜蓿叶蛋白的概念、营养价值,以及国内外对苜蓿提取加工工艺的研究进展,并详细论述了国内外对苜蓿叶蛋白的饲用价值的研究概况。同时对苜蓿叶蛋白的开发利用前景进行了展望。
