摘要
冷冻干燥是生产商品化乳酸菌发酵剂的一项关键技术。文章综述了影响乳酸菌冻干效果的因素,冻干对乳酸菌细胞膜造成的损伤和乳酸菌冻干保护措施。
Freeze-drying is a key technology during the production of starter culture of lactic acid bacteria. This article introduces the factors which influence the effect of freeze-drying, the damage from freeze-drying on lactic acid bacteria, and some protective methods for freeze-drying.
