摘要
本文简介了生物传感器的组成构造及工作原理,并对各类生物传感器的特性及在食品分析检测中的应用进行了综述。生物传感器具有较好的敏感性、特异性,操作简便、响应速度快等优势,并可以现场在线检测,在食品分析检测中有巨大的应用潜力。
It described the structure and basic principles of biosensors in this paper, and summarized the characteristics of kinds of biosensors and the application of them in the food analysis. Biosensor has a glorying prospect in food analysis with sensitivity, selectivity, simple operation, fast speed, and spot-on-line detection.
