摘要
探讨了生物酶法提取麦麸中的膳食纤维的提取工艺。研究得出酶法提取的最佳工艺组合为:混合酶制剂用量为0.3%,α-淀粉酶与糖化酶用量的比值为1:1,混合酶的酶解时间为30min,蛋白酶制剂的用量为0.5%,蛋白酶的酶解时间为30min,此时提取的膳食纤维得率为:72%。
The enzymatic method used to extract dietary fiber from wheat bran was studied, From the experiment ,we can get the optimal extracting condition were as follow :mixed enzyme addition 0.3%, α-amylase and saccharification enzyme 1:1 for 30 min, protease addition 0.5% for 30 min, the extract rates of dietary fibre were 72%.
