摘要
以红继木叶为原料,用蒸馏水提取红继木红色素,对理化性质进行了研究。结果表明:pH对该色素有显著影响该色素适合于pH<4条件下使用,在食品工业中有一定的发利用价值。
The extraction of the red pigment from red after-wood and its stability was investigated. Experimental results showed: the pH has an obviously undesirable effects on the tone of the red pigment, and this kind of pigment could be used in pH 〈 4;worth to develop in food industry.
