摘要
以红继木叶为原料,用蒸馏水提取红继木红色素,对理化性质进行了研究。结果表明:pH对该色素有显著影响该色素适合于pH<4条件下使用,在食品工业中有一定的发利用价值。
The extraction of the red pigment from red after-wood and its stability was investigated. Experimental results showed： the pH has an obviously undesirable effects on the tone of the red pigment, and this kind of pigment could be used in pH 〈 4;worth to develop in food industry.
