红曲应用于医药和食品发酵,是我国古代伟大的发明和创造,在世界微生物史上有着重要意义,是我国宝贵的科学文化遗产。近几十年来,在采用现代高新技术改造传统红曲生产与应用方面取得了许多新的重大成就,如开发航天生物制品天曲;功能红曲的研究与应用;高色价红曲技术和纯种红曲酿酒新技术的应用;红曲酯化酶新技术在白酒业的应用;以及有关红曲的国内外科技发展与信息技术交流等。(孙悟)
The application of red starter in medicine and food fermentation is a great invention attributed to ancient Chinese, which is of high significance in world microbe history and regarded as precious cultural heritage in China. In recent decades, the major technical achievements in red starter industry are presented as follows: the development of astronautic biological products-astronautic starter; the research on and the application of functional red starter; the application of new techniques of high color number red starter and pure red starter; the utilization of red starter esterified enzyme new techniques in liquor-making industry; and the international information and techniques exchange about red starter etc.
