特型酒向浓香型的转变

摘要 江西的浓香型酒大多是在特型基酒的基础上,通过外购典型浓香型基酒进行勾调而成的。以特型基酒为基础勾调浓香型酒必须熟悉特型酒和浓香型酒各自的工艺和风格特点;设计所勾调的成品酒的酒体风格,确定其市场定位;确定成品酒的酒体,确定基酒和调味酒相互间的勾调比例;再按勾调比例放大,进行勾兑组合和调香调味;最后还要对成品酒进行爆破性试验和冷冻试验等后处理。(孙悟) Most Luzhou-flavor liquor in Jiangxi province was produced through the blending of Te-type base liquor with Luzhou-flavor base liquor. The technicians should be quite familiar with the respective production techniques and liquor characteristics of both Te-type base liquor and Luzhou..fiavor liquor before the blending, and they must design the liquor body style and define the market orientation of product liquor, and further define the liquor body and the blending proportion of base liquor and flavoring liquor. Then liquor blending and liquor flavoring was done and post treatment of product liquor such as blasting testing and cold testing was carried out eventually.
