生猪屠宰加工流通环节沙门氏菌的监测研究 被引量:1

摘要 沙门氏菌在各种动物以及人类当中分布广泛,其中有些菌株可导致猪病,这种细菌主要在生长猪以及有些母猪的肠道内繁殖。感染猪只可连续数周甚至数月从粪便中排出病原,而不表现任何症状。应用沙门氏菌快速检测方法对生猪加工进行流行病学监测、分析确定生产流通过程的危害因素,以最大限度地提高猪肉加工的质量和安全性。
