摘要
采用HPLC法测定淀粉类油炸食品中丙烯酰胺的含量,样品经水提取后过固相萃取小柱净化,所得净化液选用HPLC-UV外标法检测。本方法丙烯酰胺的检出限为50μg/L,回收率大于92%。
To study a method of determination for Acrylamide in deepfry food with extraction with water and clean sample is SPE (solid phase extraction),followed by determination using HPLC with UV detector and quantified by external standard. The minimum detectable limitation is 50 μg/L and sample recovery is beyond 90%.
