摘要 目的考察大豆异黄酮的抗氧化能力。方法通过二苯代苦味酰基自由基清除实验,羟基自由基清除实验以及抗亚油酸过氧化等实验,测定和对比大豆异黄酮、维生素C和芦丁的抗氧化能力。结果大豆异黄酮对上述自由基均有清除作用,对羟基自由基的清除效果比芦丁好。结论大豆异黄酮是良好的.0H清除剂。 Objective To evaluate the antioxygenation of soybean isoflavone. Methods The antioxygenations of soybean isoflavone, vitamin C and rutin were compared on the base of the elimination tests of DPPH free radical and hydroxide free radical as well as the oxidation resistance test of linoleic acid. Results Soybean isoflavone could scavenge both of free radicals above. Comparable with rutin, it had a better effect on the elimination of hydroxide free radical. Conclusion Soybean isoflavone is a good scavenger for hydroxide free radical.
