摘要
为了提高洒的经济效益和满足国由外市场需要,近几年来正在迅速开展人工陈化酒的研究工作。同自然陈化方法相比,它的陈化效果快而好,经济效益高。目前,有15种人工陈化酒方法,激光陈化疆是最新颖的方法,国内于1981年开始。激光陈化方法的优点是陈化速度快,1分钟以内就见效,刚生产的新酒被激光辐照后酒的质量相当于自然陈化期半年以上。另外激光陈化保持酒体本身温度不变,有利于保证名酒风味。
This paper first reported the compositions of Equor and their roles,then the paper reported tho effect of making mellow liquor by laser irradiation, and finally we described and discussed the. mechanism of making mallow liquor by laser irradiation.
