摘要
研究了不同强度的机械损伤处理对草莓果实低温贮藏过程中生理生化性质的影响。结果表明,随着机械损伤程度的增大,草莓果实的电导率明显增大、VC含量快速降低、总抗氧化活性呈快速下降趋势;且果实的色泽和质地等感官品质也明显下降。
The effect of mechanical stress by falling from different height on senescence of the strawberry during cold storage was studted ,and some important physiology indexes were measured. The results indicated thai the strawberry which was handled hy the mechanical stress had obvious changes, the cell leakage rate obviously increased, the content of VC reduced, the total antiocidantive activities reduced, and the fruit softened and ripened quickly.
