固定化乳糖酶水解乳清粉合成低聚半乳糖的研究 被引量:3

Investigated synthesis of galato-oligosaccharide from whey mist by immobilized lactase

摘要 以脱盐乳清粉为原料,研究了用固定化乳糖酶水解乳清粉合成GOS的工艺条件。试验结果表明,反应时间、乳清粉浓度、温度、加酶量及pH对GOS的合成均能产生不同程度的影响,其中乳清粉浓度和反应时间影响较大,pH影响较小。通过正交试验优化出的乳糖酶水解乳清粉催化合成GOS的最佳工艺条件为:反应体系的pH5.0、乳清粉浓度50%、乳糖酶用量40U/g、温度55℃、反应时间为36h。在此条件下GOS的合成率为29.78%。 The optimum conditions of production of galacto-oligosaccharide were investigated using Immobilized lactase acts on desalUng whey mist, and thin-layer chromatography estimates the quantity of gaiactooligosaccharide. The result showed as follow: The primary factors of this reaction were desalting whey mist concentration and time, while the lest one was pH, The synthesis of galacto-oligosaccharide amount was 29.78%, when time was 36h, temperature was 55℃, whey mist concentration was 50%, pH was 5.0, and the enzyme amount was 40U/g.
