晒红烟自然陈化过程中非挥发性有机酸及高级脂肪酸含量的变化 被引量:18

摘要 使用气相色谱/质谱联用(GC/MS)仪,对晒红烟自然陈化过程中非挥发性有机酸和高级脂肪酸含量的变化进行了研究。结果表明:晒红烟在自然陈化过程中,非挥发性有机酸和高级脂肪酸的含量呈下降趋势,且不饱和脂肪酸的降解程度要大于饱和脂肪酸。3个等级烟叶相比较,下1级烟叶中有机酸和脂肪酸含量最低,在陈化过程中下降幅度最大;其次是上中3级烟叶;降幅最小的是上中2级烟叶。 The acidic components were analyzed with equipment by GC/MS to observe the changes of the acids of Fenghuang red tobacco cured by solar during two-year aging. The results showed that the contents of the nonvolatile organic acids and high fatty acid indicated decreasing trend. Degrading degree of unsaturated fatty acid was higher than saturated fatty acid. In comparison of three wades of the red tobacco, the content of the nonvolatile organic acids and high fatty acid in grade X1 was lower than in grade BG3 and BC2, but the degrading degree of grade X1 during aging was the best, the second was grade BC3 and the third was grad BC2.
