摘要 采用商业化的中性蛋白酶Neutrase 1.5 MG对底物浓度为8.5%的酪朊酸钠进行酶解,控制酶解时间分别为2、10、48 h,利用高效体积排阻色谱(HPSEC)对不同酶解时间的酶解液进行定性和定量分析,根据分析结果对Neutrase酶解酪朊酸钠的反应过程进行初步推断,所得到的肽分子量分布图谱对该酶解反应具有理论指导意义. Sodium caseinate was hydrolyzed with commercial Neutrase 15 MG. The dosage of Neutrase was 1:1 000, and the substrate concentration was 85%. The reaction time was 2, 10 and 48 h, respectively. The molecular weight distribution of hydrolysis was identified by high performance size exclusion chromatography (HPSEC). The process of enzymatic reaction was quantitatively characterized based on the peptide mapping.
