摘要
测定月见草油微胶囊粉末油脂和月见草油在贮存期内POV值变化。月见草油微胶囊粉末油脂采用超声振荡提油后进行测定,结果表明,月见草油微胶囊粉末油脂的POV值在6个月内变化不大,从最初的3.96mmol/kg升高到7.81 mmol/kg,呈升高的趋势;月见草油则不同,其POV值迅速增大到70.50 mmol/kg,然后下降,说明微胶囊化对油脂能起到很好的保护作用。
Peroxide value of microencapsulated evening primrose oil and evening primrose oil during storage were determined. Oil extraction of ultrasonic method was adopted. The results showed that the peroxide value of microencapsulated evening primrose oil changed a little during 6 months, from 3. 96mmol/kg slowly up to 7.81mmol/kg. But the evening primrose oil was different from microencapsulated evening primrose oil,the peroxide value of evening primrose oil rapidly increased to 70.50mmol/kg, then descended. Lipids can be protected from oxidation through microencaosulation.
