摘要
本文对翡翠贻贝休闲食品的工艺技术进行了探讨,着重研究了调味料对翡翠贻贝的色泽、质地和风味等方面的影响,筛选了翡翠贻贝的最佳烘干湿度和烘干时间。
This paper probed into the technology of jadeite mussel's fallowness food. The effect of seasoning on colour, texture and flavour of jadeite mussel products was studied emphatically. The best temperature and time of stoving were screened.
