酶法制取骨明胶理论初探

Preliminary Study on the Theory of the Enzymatic Method of Preparing Gelatin from Bones

本文利用差热分析技术研究了不溶性骨胶原纤维的变性情况，并采用氨基酸分析和凝胶过滤色谱技术对酶法制取骨明胶的理论进行了初步探讨。

In this paper.the denaturation of insoluble collagen from bovine bones is studied by means of the differential thermal analysis. Based on the data of amino acid analysis and gel filtration,the mechanism of enzymatic processing technology of bone gelatin is initially discussed.
