摘要
本文对用酸水解薯干淀粉的试验条件进行了探讨。在此条件下改变酸的浓度来缩短水解时间，达到快速测定的目的。本法具有时间短、能耗低、结果可靠等特点。
This paper studies the conditions of acidolysis starch in sweet potato chips.Under this condition which shortens the lysis time by changing acid concentration and leads to the fast measurement.This method has the advantages of saving time,low energy consumption and reliable experiment results.
