低硫低糖地瓜干加工新工艺研究 被引量:4

摘要 将多元有机酸无硫护色剂、臭氧灭菌、微波—蒸汽协同杀菌等先进技术和设备,应用到地瓜干加工中,生产出低硫(SO_2<10 mg·kg^(-1))、低糖(总糖含量为40%左右)、低杂菌(低于国家相关标准)、高水分(水分>20%)的地瓜干产品。规模生产实践表明,该工艺安全可靠、操作简便、易于实现自动化生产,产品安全卫生、口感好、色泽佳。 The advanced technologies were developed by the research project include Polybasic Organic-Acid sulfurless fixative, ozone sterilization and microwave-steam sterilization. These technologies were applied to produce high quality dried sweet potato products that had low sulfur content (SO2〈10 mg·kg^-1), low sugar content (the maximum amounts are about 40% only), low bacterial contaminant (well meet the related national standards) and high moisture (〉20%). Commercial production proved that new technologies were reliable, safe, easy to operate and convenient for automatically production. New products had the characteristics of safety, sanitation and dainty.
