摘要
对香料烟陈化过程中烟叶内有机酸含量变化的研究结果表明,香料烟叶片中有机酸总含量在陈化过程中呈连续下降趋势,但不同种类有机酸的变化特点明显不同。在所测定的20种有机酸中,对香料烟特征香气有重要影响的有机酸如异戊酸、β-甲基戊酸、苯甲酸、苯乙酸等成分在陈化过程中有明显的增加,其他成分则呈现程度不同的下降。香料烟总的有机酸含量在陈化过程中前18或21个月变化幅度较大,之后变化趋于缓慢。
The changes of content of organic acid in tabacco leaves during oriental tobacco aging were studied. Results showed that the total content of organic acid decreased continuously during aging and changes of content of organic acid differ obviously in all kinds of organic acid. Among 20 kinds of organic acids measured, the content of some organic acids important in the characteristic aroma increased distinctly, such as isovaleric acid, methylvaleric acid , benzoic acid , phenyl acetic acid etc, and the others decrease with different degree during aging. The total content of organic acid changes fast in the 18 or 21 months, then changes slow.
