摘要 普鲁蓝是一种由出芽短梗霉产生的胞外多糖,具有无毒、粘度低、可塑性强、成膜性好等优点。首先简要介绍它的结构和特性,之后重点评述了普鲁蓝的生物合成方法和发酵生产方法。最后对其在食品、制药、化妆品工业和废水处理等领域的应用进行了论述。 Pullulan, a kind of exopolysaccharides produced by Aureobasidium pullulans, has a number of favorable properties such as nontoxicity, low viscosity, high plasticity, good film-forming and so on. First of all, the structure and characteristic of Pullulan are briefed. Then the biosynthesis method and fermentative production method for Pullulan are reviewed in detail. Finally, the wide applications of Pullulan in the fields of food industry, pharmaceutical industry, cosmetic industry and wastewater treatment are narrated.
