摘要
针对发酵型高酸度醋在生产中存在的问题,着重介绍了发酵型高酸度醋的现状,以及在医疗、保健中的作用,在食品工业、日常生活和其它工业中的应用情况。阐述了采用液态深层酿造技术生产发酵型高酸度醋的工艺原理及其发展情况。
Many problems will arise in the process of highly sour fermented vinegar's production. Based on these problems, this article discusses highly sour fermented vinegar's present situation and its function in medical and health-care industry. Its applications in food, daily life and other relative fields are also mentioned in this article. Meanwhile, this article introduces highly sour vinegars technical principle and its developing prospect.
