大豆低聚糖具有特殊的对人体有益的生理功能,能显著促进双歧杆菌增殖,同时又具有低热值、耐酸和耐热等特点,因此使其在各种食品中的应用极为广泛。本文简介了大豆低聚糖的主要功效及在食品加工中的应用。
Soybean oligosacchadde has special beneficial physiological functions to human beings. It can improve the propagation of bifidobactefium greatly, as well as it has some properties, such as low-calorit, heat-resistunce and acid-resistunce. So it is applied widely in various foods.Functions and applications of soybean oligosaccharide in food processing were introduced in this article.
