摘要
针对食品行业广泛应用的浸管式油炸设备存在的化学不完全燃烧、热效率低等问题,在理论分析的基础上,设计制造了实验装置。在此基础上对燃烧过程中生成的烟气成分、加热器热效率等参数进行了测定,结果表明:在烟道内置入热辐射体,对燃烧性能、热效率有明显的改善和提高。并且置入不同形状的辐射体所产生的效果也有明显的不同。本文的结论对这类设备的设计有较大的指导意义。
Aimed at the problems of chemistry imperfect combustion and low hot efficiency of immersion pipe oil frying equipments widely used in food industry, an experiment equipment is designed based on the theory analysis. The smoking and heater effieieney is measured at the new equipment. The experiment results show that the method by placing hot radiation into the smoke pipe can improve combustion capacities and increase heat efficiency. Otherwise,the different shapes of radiation produce the different results. The conclusions are useful to the design of this kind of equipments.
