摘要
综述了化学方法、物理方法、生物酶法以及基因工程等技术手段在小麦蛋白改性中的应用及最新进展。其中生物酶法改性技术易于将小麦蛋白改性到所期望的功能值,是提高小麦蛋白功能特性的重要途径,并展望小麦蛋白的应用前景。
The application of modification technologies such as chemical, physical, enzymatic and genetic engineering methods in wheat protein and up-to-date progress were summarized. It was easy to obtain the desired functional value of wheat protein by means of enzymatic modifie.ation, which was an important way to improve the functional properties of wheat protein. And the prospect of application was also predicted.
