摘要
[目的]了解金湖县糕点食品的卫生状况。[方法]对金湖县2000~2004年糕点食品卫生监测结果进行统计分析。[结果]金湖县2000-2004年糕点食品总合格率为88.71%(550/620),各年间合格率的差异有统计学意义(P〈0.01)。不同种类的糕点合格率不同,月饼合格率最高,大糕合格率最低。大型超市与小型作坊、县城与乡镇、本地与外埠、抽检与送检糕点合格率的差异均无统计学意义(P〉0.05)。[结论]金湖县糕点食品卫生质量总体上较好,但也存在一些问题。卫生部门必须以《食品卫生法》和《糕点厂卫生规范》的要求去加强行业管理、加大监督监测力度,提高糕点食品的卫生质量,杜绝食物中毒的发生。
[Objective]To understand the hygienic situation of pastry food in Jinhu County. [Methods]To make statistic analysis on pastry food hygiene surveillance results from 2000 to 2004 in Jinhu County. [Results]The whole qualification rate was 88. 71% (550/620), there were remarkable differences between each year' s qualification rate. Qualification rate was different in various pastry with the highest in moon cake, the lowest in sliced pastry. There was no significant difference between supermarket and small grocery, downtown and village, local and ecdemic, spot-check and submit sample. [Conclusion]The pastry food hygiene quality was good as a whole only with few problems. Meantime, the health department should strengthen the supervision and surveillance according to "Food Hygiene Law of PRC" and "Hygienic Specifications of Pastry Factory" so as to improve the pastry hygienic quality and prevent the food poisoning.
