摘要 我国猪油来源丰富,但因制油方法上存在很多弊端及猪油的特性,使毛猪油在常温下非常容易氧化酸败。通过精炼可以将毛猪油加工成符合食品工业用的精制猪油,其稳定性好、应用范围广。概述了猪油的连续精炼工艺,对各工序的操作过程、参数、使用设备进行了详细的叙述,并提出了在设计、安装及生产操作过程中应注意的一些问题。 The source of lard is abundant in our country, but crude lard is very apt to be oxidized under normal atmospheric temperature because of many drawbacks on preparing lard method and the characteristic of lard. The crude lard can be processed into edible oil meeting food industry' s needs through continuous refining craft. The refined lard has good stability, and can be widely used. continuous refining technology, operating parameters and equipment of crude lard were described. In addition, some questions that should be paid attention to in the course of design, installing and operating, were put forward.
