摘要
在不同温度下热处理金银花蜜不同时间,测定热处理过程中金银花蜜中淀粉酶、蔗糖转化酶及葡萄糖氧化酶酶值的变化,分析热处理过程中金银花蜜的淀粉酶、蔗糖转化酶及葡萄糖氧化酶的酶值变化规律,评价金银花蜜中生物酶的热稳定性。
The amylase,invertase and glucose oxidase values in Honeysuckle were determined by heating the Honeysuckle with different time while it was kept at different temperature, the change of enzymatic activity were analyzed, and the heat tolerance of enzymes in Honeysuckle was valued.
