摘要
冰温技术是一种新兴的用于食品贮藏保鲜的技术。本文介绍了冰温技术的概念、原理,并系统介绍了目前冰温技术在食品工业中的应用发展状况,为进一步研究冰温技术和扩大其在食品工业中的应用提供重要的背景知识。
Controlled Freezing Point technique is a new store and keep the freshness technology. This paper described the definition principle of Controlled Freezing Point technique and systematically summarized the application and development of this technology on food industry. It offered basic knowledge for future in-depth study and development of Controlled Freezing Point technique.
