摘要
依据国标分析方法,对菌核侧耳干品中营养成分进行了分析测定。结果表明,菌核侧耳中蛋白质含量为15.60%,脂肪2.50%,粗纤维6.30%,粗多糖10.8%,总糖34.60%;矿质元素中钾、钙、铁、锌、硒含量较高,分别为22400、768、157、105、0.05mg/kg;氨基酸总含量为14.9%,其中人体必需的8种氨基酸量占氨基酸总量的46.10%,异亮氨酸、赖氨酸、亮氨酸含量相对较高。
Based on the National Standard analytic methods, the contents of several nutrition components of dried Pleurotus tuber-regiurn (Fr,) Sing were assayed. The results showed: The content of protein was 15.60% in the edible fungus, that of fat was 2.50%, fiber was 6,30%, crude polysaccharide was 10.8%, and total sugar is 34. 60%. The content of K, Ca, Fe, Zn , and Se were relatively high, and were 22400, 768, 157, 105, O.05mg/kg, respectively, The content of total amino acid was 14.9%, Eight kinds of essential amino acid made up of 46 .10% of total amino acids, and content of LLE, LYS and LEU were relatively high.
