研究了杨梅速冻的不同工艺过程。原料采收、拣选后直接快速冻结可较好地保持鲜果特有的风味。
Different treatments in the processing of fast frozen Chinese waxmytele were studied. Good quality and good flavor could be maintained when the law material was frozen directly without blanching.
