摘要
研究了枸杞蜜的耐热性能,分别测定了枸杞蜜中淀粉酶和蔗糖转化酶酶值、过氧化氢和HMF含量在恒温热处理过程中的变化,分析了恒温热处理过程中枸杞蜜中淀粉酶和蔗糖转化酶酶值、过氧化氢和HMF含量随热处理温度和时间的变化规律,确定了适宜枸杞蜜恒温热处理工艺参数.
The enzymatic activity or value of enzymes (i. e. amylase, invertase), content of Hydrogen Peroxide and HMF in medlar honey with time were determined while honey was kept at some constant temperature by heating it. The changes of enzymatic activity were analyzed, the heat tolerance of enzymes in medlar honey was valued. The technological data for the process of medlar honey were confirmed.
