摘要
辛烯基琥珀酸酯(纯胶)最初由美国Caldwell和Wurzburg研制成功,并于1953年申请了专利。对国内食品行业来说,它是一种新型变性淀粉,1997年被列于中国食品添加剂手册中。烯基琥珀酸酯化淀粉是一大类变性淀粉,被允许使用于食品业的仅有一种,即辛烯基琥珀酸淀粉酯(starch octenyl succinate)。
