摘要
以紫甘蓝为原料,采用含水乙醇、稀酸及酸性乙醇提取出天然的紫甘蓝色素,结果表明用酸性乙醇作提取溶剂较好,最佳的提取工艺条件为:溶剂量为1:2,酸性乙醇的浓度为20%,在45℃的温度下,浸提3h。
The pigment of the purple wild cabbage were extracted by using alcohol, acid and acid alcohol solution .The research results showed that the acid alcohol is the best extracting solvent and the best technology conditions are: ratio 1:2, acid alcohol concentration 20 %, temperature 45 ℃ and extracting time 3 h.
