摘要
以糙米为研究对象,采用植酸酶酶解糙米中的抗营养因子———植酸,用比色法测定糙米中的磷含量,研究超声波对酶解糙米抗营养因子的传质性能。初步探讨了超声波强化传质过程的作用机理,并初步确定了超声强化传质过程的参数:功率为25 W,时间为30 m in。
The performance of mass transfer enhanced by ultrasonic wave for enzymolysis of anti-nutritional factor (ANF) -phytic acid in brown rice was studied by using phytase and through measuring phosphor content in brown rice by colorimetry. The mechanism of enhancing mass transfer by ultrasonic wave was primarily analyzed and the parameters of enhancing mass transfer capability Of ultrasonic wave were established: The power is 25 W and the period lasts 30 min.
