摘要
采用贵州产的毛叶蕨菜为原料,利用水提醇析法提取蕨菜粗多糖,通过对DPPH.的清除效率来评价其抗氧化活性。结果表明,蕨菜粗多糖有较强的抗氧化活性,在浓度为30μg/ml时对DPPH.清除效率高达80.01%,明显高于同浓度的茶多酚及人工合成抗氧化剂BHT和TBHQ对DPPH.的清除效率(66.4%以下)。
Polysaccharide from Pteridium revolutum was tested with DPPH · to estimate their antioxidatire activity. The results showed that the polysaccharide had higher antioxidative activity than BHT, TBHQ and TP at the same concentration. Therefore, they have the potentiality to be safe and effective natural antioxidants for foods instead of synthesized ones.
