摘要
介绍了植物源、动物源和微生物源果蔬保鲜剂的类型、特点、保鲜机理及研究应用的概况,提出了存在问题和发展方向。
Advances in researches on botanical, animality and microbial preservatives of fruit and vegetable were reviewed,including types, characters, mechanism of action, stuation and developmental tendency to provide some clues to the researchers.
