介绍了目前应用于食品中的微波技术(干燥、杀菌、萃取、消解)的原理、特点及应用现状,并对其发展前景作了预测。
In this paper, the mechanism, characteristics and application situation of microwave techniques (drying, disinfect, extraction, digestion) was introduced in food processing. The prospect of microwave techniques in the food was forecasted.
