摘要
研究了朱顶红花红色素的提取条件和理化性质。结果表明,pH 1.0的95%乙醇是朱顶红花红色素的最佳提取剂;朱顶红花红色素属花青素类色素,易溶于水和酸性乙醇;pH值对色素影响明显,在酸性条件下色泽稳定且具有热稳定性。光照能加快色素降解。金属离子Na+,Ca2+,A13+,Cu2+,Zn2+对色素色泽无影响,而Fe3+,Pb2+有不良影响。色素的抗氧化还原性能较好。蔗糖、葡萄糖和盐等添加剂对色素无影响。
Physico-chemical properties and extraction conditions of the red pigment in flowers of Hippeastrum vittatums were studied. The results showed that the highest yield of the pigment was obtained from 95% C2H5OH solution with pH 1.0. The red pigment from Hippeastrum vittatums is classified to anthocyanins. It can be dissolved in water and acidity ethanol. The solution pH has significant effect on the tone of the pigment. The pigment was stabilities in the conditions of acid environment and heat. Degradation of the pigment could be accelerated by sunlight. The ions of Na^+ ,Ca^2+ ,Zn^2+ ,Al^3+ ,and Cu^2+ had no effect on the tone of pigment, but the ions of Fe^3+ and Pb^2+ had severe disadvantageous effect. This kind of pigment possesses better anti-oxidation ability. Addition of glucose and sucrose had no effect on the tone of the pigment.
