摘要
对陕西西乡产樱桃色素的稳定性进行了研究。结果表明,该色素水溶性好;受PH值影响很大,适宜在酸性条件下使用;对热较稳定,但不耐80℃以上的高温;金属离子、氧化剂和还原剂对其有一定的影响。
The stabitity of the red pigment from cherry fruits grown in the city ofXixiang, Shaanxi Province was studied in this paper. The results showed that the red pigment was water soluble.The effects of different pH value for the stability of the red pigment were not the same, and the pigment should be used in acid condition. The red pigment was stable to heat until the temperature exceeded 80℃ .Mentallic ions,oxidizers and reductants had some influences to the red pigment.
