摘要 大麦β-葡聚糖属非淀粉多糖类,具有降低胆固醇、降血糖、提高机体免疫等生理功能,同时可作为食品添加剂,开发应用潜力很大。简要综述近年来有关大麦β-葡聚糖的结构、特性、生理功能等方面的研究。 Barley β-glucan is a kind of non-starchy polysaccharide, It shows great potential to develop because it has hypocholesterolemic and hypoglycemic functions and could be used as food additives. The structure and physiological functions of barley β-glucan are reviewed.
