摘要
利用豆粕的酶水解液作为氨基酸来源,制备复合氨基酸锌络合物,作为一种新型的油脂抗氧化剂。通过测定猪油的过氧化值,考察了不同因素对复合氨基酸锌抗氧化性的影响。结果表明,用决酶水解豆粕所制得的络合物的抗氧化效果与α-生育酚的十分接近,且络合物在高温条件下仍具有抗氧化性。
Micromineral zinc chelate of compound amino acids made from soy-cake hydrolysate o f enzyme can be used as a new kind of antioxidation for lard. The effect of various factors on antioxidation of the chelate was studied by measuring POV(% ) for lard. As a result, the result of antioxidation of the chelate made from pancreatin was as the same as Q-tocopherol's, and the product is also effecTive in high temperature.
