摘要
从考古发掘酒窖垂直分布的叠压堆积层和微生物学研究成果两方面,证实了水井坊是罕见的连续发酵生产使用几百年的古老酒坊。水井坊考古所建立的学术方法,为中国白酒考古树立了良好的模式,建立了白酒考古这个新的学术领域,其他白酒遗址相继发现,使中国白酒的史学研究从书本和传说走上了实证之路。
Both the vertically distributed stacking accumulation horizon in pits (archaeological discovery) and the microbiological research achievements proved Shuijingfang a rare ancient distillery with several hundred years of continuous fermentation & production history. The academic methods initiated by Shuijingfang Archaeology Institute had become a good model for liquor archaeology in China, which opened a new academic field-liquor archaeology. The successive discovery of other liquor-making relics had upgraded historic study of liquor in China from written records and legends to positivism.
